10 Ways With… Mini Quiches

These tasty treats are easy to make and perfect for entertaining

BASIC MINI QUICHE BATTER

Prep 10 mins + 10 mins to chill | Cook 10 mins | Makes 12

3 sheets frozen shortcrust pastry, thawed
3 eggs, at room temperature

2 tbsps cream

1. Preheat oven to 180 C. Grease a 12-hole (1/3-cup) muffin tray. Using an 11.5-cm round cookie cutter, cut 12 discs from pastry. Line prepared holes with pastry. Chill for 10 mins.

2. Line pastry with baking paper. Cover the base with dried beans, rice or pie weights. Bake for 5 minutes. Remove weights and paper. Bake for a further 5 mins or until just coloured.

3. Reduce oven temperature to 160 C. Whisk eggs with cream in a jug. Continue as per recipe of choice that follows.

ITALIAN SAUSAGE, TOMATO & ROSEMARY MINI QUICHE

Prep 10 mins | Cook 30 mins | Makes 12

1 quantity Basic Mini Quiche Batter
3 thin Italian sausages
2 tbsps chopped rosemary leaves, plus extra, to serve

100 g cherry tomatoes, halved

1. Prepare Basic Mini Quiche Batter as recipe directs. Squeeze sausage mince from casings. Heat a nonstick frying pan over moderate heat. Add sausage mince to pan; cook stirring to break up lumps, for 3 mins or until browned. Stir through rosemary. Cool slightly.

2. Add sausage mixture to cream mixture in Basic Mini Quiche Batter recipe. Pour into prepared pastry cases. Top with tomato. Bake for 25 mins or until just set at centre. Serve sprinkled with extra rosemary.

TURKEY, CRANBERRY & BRIE MINI QUICHE

Prep 10 mins | Cook 25 mins | Makes 12

1 quantity Basic Mini Quiche Batter
200 g sliced turkey, finely chopped
⅓ cup cranberry sauce
125 g brie, cut into 12 pieces

10 g baby rocket, to serve

1. Prepare Basic Mini Quiche Batter as recipe directs. Combine turkey and cranberry sauce in a bowl. Add to cream mixture in Basic Mini Quiche Batter recipe.

2. Pour into prepared pastry cases. Bake for 20 mins. Top quiches with brie. Bake for a further 5 mins or until just set at centre. Serve sprinkled with rocket.

MUSHROOM & PESTO MINI QUICHE

Prep 10 mins | Cook 40 mins | Makes 12

1 quantity Basic Mini Quiche Batter
30 g butter
250 g button mushrooms, thinly sliced
2 cloves garlic, crushed

¼ cup sun-dried tomato pesto

1. Prepare Basic Mini Quiche Batter as recipe directs. Melt butter in a frying pan over moderate heat. Add mushroom; cook and stir for 5 mins or until tender. Add garlic; cook and stir for 30 secs, or until fragrant. Cool slightly.

2. Add the mushroom mixture to cream mixture in Basic Mini Quiche Batter recipe. Pour into prepared pastry cases. Bake for 25 mins or until just set at centre. Serve topped with pesto.

MOROCCAN SALMON & PEA MINI QUICHE

Prep 10 mins | Cook 25 mins | Makes 12

1 quantity Basic Mini Quiche Batter
210 g can pink salmon, drained, skin and bones removed, flaked
⅓ cup frozen peas, thawed
1 green onion, thinly sliced

1½ tbsps Moroccan seasoning

1. Prepare Basic Mini Quiche Batter as recipe directs. Combine salmon, peas, onion and seasoning in a bowl.

2. Add salmon mixture to cream mixture in Basic Mini Quiche Batter recipe. Pour into prepared pastry cases. Bake for 25 mins or until just set at centre.

CARAMELISED ONION & FETA MINI QUICHE

Prep 10 mins | Cook 35 mins | Makes 12

1 quantity Basic Mini Quiche Batter
30 g butter
2 medium red onions, thinly sliced
1 tbsp balsamic vinegar

125 g firm feta, crumbled Lemon wedges, to serve

1. Prepare Basic Mini Quiche Batter as recipe directs. Melt butter in a frying pan over moderate heat. Add onion; cook and stir for 5 mins or until soft. Add sugar and vinegar; cook and stir for a further 5 mins or until caramelised. Cool slightly.

2. Add onion mixture to cream mixture in Basic Mini Quiche Batter recipe. Pour into prepared pastry cases. Top with feta. Bake for 25 mins or until just set at centre. Serve with lemon wedges.

CHICKEN, CORN & CAPSICUM MINI QUICHE

Prep 10 mins | Cook 25 mins | Makes 12

1 quantity Basic Mini Quiche Batter
250 g shredded cooked skinless chicken
½ cup drained canned corn kernels
¼ cup red char-grilled capsicum, thinly sliced
½ cup extra-light sour cream

¼ cup sweet chilli sauce

1. Prepare Basic Mini Quiche Batter as recipe directs. Combine chicken, corn and capsicum in a bowl. Add to cream mixture in Basic Mini Quiche Batter recipe. Pour into prepared pastry cases.

2. Bake for 25 mins or until just set at centre. Serve topped with sour cream and sweet chilli sauce.

TUNA & OLIVE MINI QUICHE

Prep 10 mins | Cook 25 mins | Makes 12

1 quantity Basic Mini Quiche Batter
185 g can tuna in oil, drained, flaked
½ cup pitted green olives, chopped
⅓ cup red char-grilled capsicum, finely chopped
⅓ cup aioli

1 tbsp finely chopped chives

1. Prepare Basic Mini Quiche Batter as recipe directs. Combine tuna, olives and capsicum in a bowl. Add to cream mixture in Basic Mini Quiche Batter recipe. Pour into prepared pastry cases.

2. Bake for 25 mins or until just set at centre. Serve topped with aioli and chives.

SPINACH & RICOTTA MINI QUICHE

Prep 10 mins | Cook 25 mins | Makes 12

1 quantity Basic Mini Quiche Batter
250 g packet frozen chopped spinach, thawed, excess liquid removed
150 g fresh ricotta, crumbled
⅓ cup cream
1 egg, whisked, plus 12 hard-boiled eggs, peeled

½ cup grated tasty cheese

1. Prepare Basic Mini Quiche Batter as recipe directs, omitting cream and egg. Combine spinach, ricotta, cream and whisked egg in a bowl. Spoon into prepared pastry cases.

2. Make an indent in each. Bake for 25 mins or until just set at centre.

CHEESE & BACON MINI QUICHE

Prep 10 mins | Cook 30 mins | Makes 12

1 quantity Basic Mini Quiche Batter
2 tbsps light olive oil
250 g middle bacon, rind removed
¼ cup barbeque sauce, plus extra, to serve
½ cup pizza cheese

½ cup drained canned pineapple pieces, finely chopped

1. Prepare Basic Mini Quiche Batter as recipe directs. Heat oil in a large frying pan over moderate heat. Add bacon; cook and stir for 5 mins or until crisp. Cool slightly.

2. Combine bacon, barbeque sauce, cheese and pineapple in a bowl. Add to cream mixture in Basic Mini Quiche Batter recipe. Pour into prepared pastry cases. Bake for 25 mins or until just set at centre. Serve with barbeque sauce.

ROASTED TOMATO & OREGANO MINI QUICHE

Prep 10 mins | Cook 35 mins | Makes 12

1 quantity Basic Mini Quiche Batter
350 g mixed cherry and teardrop tomatoes, halved
2 tbsps light olive oil
2 tsps smoked paprika
2 tsps dried oregano
125 g fresh ricotta, broken into 12 chunks

1 tbsp chopped flat-leaf parsley, to serve

1. Prepare Basic Mini Quiche Batter as recipe directs. Preheat oven to 200 C. Line an oven tray with baking paper. Combine tomatoes, oil, paprika and oregano in a bowl. Place on prepared tray; bake for 10 mins or until collapsed slightly.

2. Reduce oven temperature to 160 C fan-forced. Add tomato mixture to cream mixture in Basic Mini Quiche Batter recipe. Pour into prepared pastry cases. Bake for 25 mins or until just set at centre. Serve sprinkled with parsley.
