Almond Apricot Energy Balls 

MAKES: 12 

TOTAL TIME: 10 MINUTES 

> ⅓ cup dried apricot halves (around 6)

> 1 tbsp honey 

> ¼ cup plus 1 tbsp almond butter, at room temperature 

> ¼ cup ground flaxseeds 

> ¼ tsp kosher salt 

> ⅔ cup rolled oats 

> ¼ cup freeze-dried strawberries, crushed into powder (optional) 

1. Place apricots, honey, almond butter, flaxseeds and salt in bowl of food processor. Pulse five times, then process mixture for about 20 seconds. 

2. Scrape down sides of the bowl, add oats, pulse five times, then process for another 20 seconds. 

3. Use tablespoon measure to scoop out mixture. Shape each scoop into a ball, then roll in strawberry powder (if desired). Refrigerate until ready to eat.

84 calories, 5g fat (0.6 g saturated), 9g carbohydrate, 3g protein, 2g fibre, 57mg sodium 

CHANGE UP THE FLAVOURS

Twist: Chocolate, Peanut, Pretzel

Follow the recipe for Almond Apricot Energy Balls, but swop peanut butter for almond butter. Use just ¼ cup rolled oats, and in step 2, add ⅓ cup crushed pretzels, 2 tablespoons salted peanuts and 2 tablespoons dark-chocolate chunks to the batter. Instead of strawberry powder, roll in cocoa powder or additional crushed pretzels. 

Twist: Tropical Fruit

Follow the recipe for Almond Apricot Energy Balls, but swop ⅓ cup chopped dried mango and 1 ring dried pineapple (chopped) for the apricots. In step 2, add 2 tablespoons toasted unsweetened coconut to the batter. Instead of strawberry powder, roll in additional toasted unsweetened coconut that has been crushed. 

Twist: Carrot-Ginger

Follow the recipe for Almond Apricot Energy Balls, but in step 2, add ¼ cup packed finely grated carrot, 1 teaspoon ground ginger and ⅛ teaspoon ground turmeric. Instead of rolling in strawberry powder, garnish with additional finely grated carrot.
