Wouldn’t it be nice to wake up to the smell of pancakes? This is especially true during the holiday season and on Christmas morning, when you’ve spent the past few days wrapping gifts, decorating the house, attending parties, and preparing a family feast.

Joseph Yeo, executive chef of multiconcept eatery SPRMRKT and partner chef of Bosch, agrees. And the pancakes he’s suggesting is not your typical recipe. “Try a new one this weekend for brunch with the kids,” he recommends. But the beauty of this dish is that you can have it anytime you want.

His version, in particular, is fluffy and full of flavour. It’s easy to make and healthy, too, as you can use an array of juicy summer fruit as toppings. Their colours and a sprinkling of snow powder will be the perfect reminder of the holiday season.

TIP: “Separate the egg yolks from the egg whites and ensure that they do not mix,” says Chef Yeo. “It may affect the stiffness of your egg whites or cause it not to rise.”

PANCAKES WITH SUMMER BERRIES

Yields 5 pancakes

Prep time: 1 hour

Cooking time: 20 minutes

Ingredients:

380g flour

30g baking powder

400ml milk

5 eggs (yields about 160g egg yolks & 250g egg whites)

60g sugar

2g sea salt

1 tbsp butter

Strawberries, raspberries and blueberries (or other fruit of your choice) Snow powder, for dusting

Directions:

1 Sift the flour and baking powder. Mix and set aside.

2 Separate egg yolks and egg whites. 

3 Using the balloon whisk attachment to get a smooth and even-textured batter, whisk milk and egg yolks for 1 minute, adding sifted flour and baking powder gradually during the mixing process. Set aside. 

4 Using the whisk attachment, add egg whites to a clean mixing bowl and activate the Egg White function of the OptiMUM Sensor Control. Whisk until soft peaks form. This function also allows for a light and airy batter, and creates perfectly whipped meringue. 

5 When soft peaks form, add sugar and salt gradually. Continue whisking until firm peaks form. 

6 Gently fold a third of this egg-white mixture into egg-and-flour batter. Fold in remaining egg-white mixture. Be careful not to overfold so it remains light and fluffy. Let pancake mixture rest for 30 minutes. 

7 Melt butter on an iron cast pan over medium heat. Spread 1 ladle of pancake mixture and cook for 10 to 15 minutes. Serve with berries or your preferred syrup or jam. Dust with snow powder or icing sugar to serve.
