HAM AND THE LAUGHING COW MUFFIN

• 6 portions of The Laughing Cow Cheese (any flavour of your choice) • 150 g flour • 1 sachet of baking powder • 3 eggs • 150 ml lukewarm milk • 50 ml oil • 100 g grated cheese • 150 g diced ham • Salt and pepper to taste

1 Preheat the oven to 180 C.

2 Mix the flour and baking powder in a bowl.

3 Add the eggs and mix.

4 Add milk and oil to the mixture and mix thoroughly until smooth.

5 Add the grated cheese and mix, then add the ham.

6 Fill half of the muffin tins with mixture, placing a portion of The Laughing Cow cheese on top of each tin.

7 Top up each tin with the remaining batter.

8 Bake for 25 to 30 mins or until golden brown.

9 Serve lukewarm or cold with lettuce.

Serving tip: Reheat the cakes in the microwave before serving so that The Laughing Cow cheese centres are soft and warm.
