Piri-Piri Chicken

Prep 10 mins • Cook 1 hour • Serves 4 to 6

• 2 tbsps olive oil • 8 chicken thigh cutlets, skin on • 1 red onion, sliced • 2 red capsicums, seeded, chopped • 2 garlic cloves, crushed • 260 g piri piri marinade sauce • 1 cup white wine • Cooked rice, broccolini, flatbread, to serve

1 In a large, flameproof casserole dish, heat oil on high.

2 Brown chicken 4 to 5 mins turning once. Transfer to a plate. In same pan, saute onions 2 to 3 mins, until tender. Add capsicum and garlic. Cook 2 to 3 mins.

3 Return chicken to pan with sauce and wine. Season to taste. Reduce heat to low. Simmer, covered, 40 to 45 mins.

4 Serve with rice and steamed broccolini. Accompany with flatbread, if liked.

TIP: If using skinless chicken thigh fillets, reduce cooking time by 15 mins.
