Only a handful of champagne houses release just vintage bubbly, and Dom Perignon is one of them.

But in 2014, it released an even more luxurious version of its exclusive bubbly: the P2. P2, or Plenitude Deuxieme, is a second release of a previous vintage, with the additional ageing on the lees providing new character to the original. This year, Dom Perignon has unveiled the P2 2000, a new expression of the Vintage 2000 released back in 2008. Seventeen years in the cellars have produced a surprisingly fresh and lively wine, with notes of hay, brioche, bergamot and stone fruit.
