Apple Crumble

INGREDIENTS
For the base:
10 digestive biscuits.
5 tbsp caster sugar.
7 tbsp unsalted butter, melted.
½ tsp cinnamon powder.
For the apple filling:
1/3 cup brown sugar.
2 tbsp plain flour.
1 tsp cinnamon powder.
1/8 tsp nutmeg powder.
5 apples, peeled, cored and cut into 1cm slices.
½ tbsp lemon juice.
For the crumble:
¾cup plain flour.
1/3 cup brown sugar.
3 tbsp caster sugar.
A pinch of salt.
6 tbsp cold, unsalted butter.
DIRECTIONS
1 Preheat the oven to 190 deg C.
2 Put the digestive biscuits in a zip-lock bag and break them up with a rolling pin.
3 To make the base, combine the biscuits with sugar, butter and cinnamon in a bowl until they resemble large breadcrumbs.
4 Press the mixture firmly into the base and sides of an 8-inch baking pan. Bake for 7min.
5 Remove from the oven and set aside to cool. Then turn the oven heat up to 200 deg C.
6 To make the apple filling, mix the sugar, flour, cinnamon powder and nutmeg powder in a large bowl.
7 Add the apple slices and lemon juice, and toss well with the sugar mixture.
8 Spoon the apple filling onto the biscuit base.
9 In another bowl, prepare the crumble. Using your hands, mix the flour, brown sugar and caster sugar with the salt and unsalted butter till the mixture forms little clumps. Scatter generously over the apple filling.
10 Bake for 15min and then lower the heat to 180 deg C and bake for a further 15min or until the apples are bubbling, a fork slides easily into the centre of the dish, and the crumble is golden brown.
