RED

Also known as Spanish onions, these taste sweet and mild. They are great in salsas, and either roasted or caramelised.

SPRING

The spring onion is just a regular onion harvested early, so has a milder flavour. Best eaten raw in salads or lightly sauteed.

ESCHALOTS

Similar to garlic, they can be grey, brown or purple in colour, and work well in Asian cooking. Add them to sauces or curry pastes

WHITE

Thinner skinned than brown onions, they are more pungent, with the small variety often used for pickling. Use in salads or for a touch of sweetness in cooked food.

BROWN

One of the most popular and versatile varieties, if a recipe calls for an onion, go with brown. Lovely in soups and stews, or sliced on a burger.
