Joseph Yeo, executive chef of multiconcept eatery SPRMRKT and partner chef of Bosch, knows just how much a well-made soup can aid in a mum’s recovery – him being a dad to three kids who’s seen how it has helped his wife, too. “Confinement can be a tough time but, with healthy food, it can get easier,” he observes.
It’s why he recommends this recipe with its selected ingredients. “Young or green papaya is a source of vitamin C that helps to boost the immune system. It aids in the production and quality of breast milk, as well,” he says.
“Chicken is a good source of protein and boosts energy. Dates are a great source of iron as they help to replenish the blood, reducing the risk of anaemia. Dried longan helps in relaxation and sleeping; it’s also beneficial to the heart and kidneys,” he concludes. So, try making this hearty and delicious meal today!
YOUNG PAPAYA, CHICKEN WITH DATES AND DRIED LONGAN SOUP
Serves 4
Prep time: 15 minutes
Cooking time: 90 minutes
Ingredients:
10g ginger
400g young papaya
1 whole chicken
2L water
10 red dates
10 dried longan
Directions:
1. Slice ginger.
2. Remove seeds from papaya before cutting it into cubes.
3. De-claw and chop chicken into 12 pieces.
4. Pour water into a pot, and add chicken. Bring to a simmer and skim off the residue. y Let the pot boil for about 30 minutes, continuing to skim off the oil on the surface.
5. Add the papaya cubes, red dates, ginger slices and dried longan. Cook for another 45 minutes.
