Cocoa is processed cacao roasted at high temperatures, while cacao is made via the process of cold-pressing unroasted cacao beans which preserves all the antioxidants.

Dark chocolate contains the highest cacao content, while milk chocolate contains about 20 per cent less cacao in general because of milk solids added. White chocolate, on the other hand, is a chocolate derivative which does not contain any cacao at all.
