COCONUT CHICKEN BOWL

Serves 2.

INGREDIENTS.

1 round loaf of bread (about 18cm in diameter) 200g chicken fillet, cut into thick strips 50g baby corn, cut into portions 6 button mushrooms, halved.

For the seasoning:

1 tsp sesame oil 2 tbsp cooking oil 1 tbsp galangal, chopped 1 stalk lemongrass (lower portion), chopped 3 or 4 kaffir lime leaves, shredded 2 tbsp chopped coriander ½ chilli, chopped A pinch of salt A pinch of pepper 1 cup coconut milk ½ cup hot water 1 tsp fish sauce 1 tsp lime juice.

DIRECTIONS.

1. Slice off the top part of the bread and set it aside to use as a lid. Hollow out the bread.

2. Toast the bread in the basket of the Airfryer. Cook it for 5min at 180 deg C. Set aside on a plate.

3. Mix the chicken, corn and mushrooms with all the seasoning ingredients and place on the baking tray of the Airfryer. Cook at 200 deg C for 4min. Stir halfway through cooking.

4. Add the coconut milk and water, and cook for another 5min.

5. Pour the mixture into the bread.

6. Add fish sauce and lime juice to taste, before serving.
