NAM NAM NOODLE BAR Mention Vietnamese noodles and pho, which usually comes with flat rice noodles, is often the first dish that comes to mind. For something different, try the Sauteed Lemongrass Pork Noodle ($10.50) at Nam Nam. The round rice noodles – called “bun” – are tossed in a tangy sauce, and topped with lemongrass-marinated pork, fried spring rolls, pickled carrots and daikon vegetables.

MY DINING ROOM Rice vermicelli – thin noodles made from rice flour that have a texture similar to that of angel hair pasta – is commonly used in dishes across Asia, but no one serves it up quite like My Dining Room does. Its unique pairing of the noodles and freshly brewed soup with a fish stock base makes its Rice Vermicelli with Mushroom in Fish Soup ($9.80++) a light yet comforting meal.

EAT AT SEVEN MENYA TAKEICHI This ramen shop is worth a visit for its luxuriously thick, creamy and collagen-rich broth, made by simmering fresh chicken and chicken feet for hours on end. The must-try? Its Special Rich Shoyu Ramen ($16.50++). Not used to the thick broth? Add some clear soup to it – the restaurant provides a flask of it at each table.

ICHIBAN BOSHI Soba – Japanese buckwheat noodles high in protein, fibre and amino acids – is a popular choice for health-conscious diners, and Ichiban Boshi’s version definitely makes the cut. Its Tempura Seiro ($14.90++) – chilled soba served with tempura – is the prefect refreshing meal on hot days.

GRANDMA’S We don’t quite know if mee siam has Thai, Malay or Peranakan origins. What we do know is that the version at Grandma’s ($8.90++) – bee hoon served with a generous helping of gravy made with, among other ingredients, homemade tamarind paste – is exceptionally tempting with its blend of spicy, sweet and sour flavours.
