The 42-seater restaurant under the Unlisted Collection group aims to diminish barriers in dining. A marble communal table doubles as the open kitchen’s prep station, for example, encouraging interaction between diners and chefs. Nouri’s cuisine, described as “crossroads cooking”, fuses the food of different cultures.

Take the Acaraje and Vatapa, which unites Brehm’s Brazilian heritage with the nuances of South-east Asian cuisine. Here, Afro-Brazilian white pinto bean fritter and shrimp paste are coupled with a locally inspired turmeric and coconut curry sauce. Try the unorthodox food pairings with rose and orange wines (white wines turned orange from a grape skin and seed infusion).
