My Reading Room

1. Preheat oven to 230 deg C and grease large baking sheet with olive oil. On lightly floured surface, roll and stretch dough into large rectangle; transfer to prepared baking sheet.

2. Spread pesto over dough and add a pinch of crushed red pepper flakes.

Add asparagus and drizzle with olive oil. Season with oregano and salt and pepper to taste.

3. Bake pizza for 10 minutes and then remove from oven. Tear burrata into pieces and sprinkle over pizza, and crack eggs around the cheese. Return pizza to oven and bake until cheese melts and eggs are set, another 8 to 12 minutes. Remove from oven; garnish with fresh basil and arugula. Season with additional salt, pepper, and crushed red pepper flakes to taste.
