Fruit Muesli Slice

2 tbsps honey.
100 g butter, softened.
50 g raisins (or sultanas).
60 g pepitas.
1 cup rolled oats.
25 g shredded coconut.
100 g finely chopped dried apricots.
110 g caster sugar.
1 egg yolk.
100 g self-raising flour.
1 tbsp custard powder.

1. Preheat oven to 180 C (160 C fan-force). Grease a 20 cm X 30 cm lamington pan and line with baking paper.

2. Heat honey and a quarter of the butter in a small saucepan, stirring until smooth. Transfer to a medium bowl; stir in raisins, pepitas, oats, coconut and apricots.

3. Beat sugar, egg yolk and remaining butter in a small bowl with an electric mixer until light and fluffy. Mix in the sifted flour and custard powder. Press mixture over base of pan; sprinkle with muesli. Bake for about 25 mins.
