Cocotte at Wanderlust Hotel has given way to Audace, the Unlisted Collection’s latest venture into French bistronomy. Chef Jeremy Gillon, formerly of one- Michelin-star L’Epicurien in the French Alps, brings his love for alpine herbs into the kitchen. Matricaire from the camomile family, for example, is foamed to enhance pan-seared red snapper and pumpkin. The restaurant’s name means boldness, and here it takes on eccentric dimensions. Diners pick crushed-up menus from picnic baskets and the table’s floral centrepiece reveals an after- dinner “surprise” of sugared crushed almonds.
