Indulge in this chocolate molten lava cake, which takes only 10min and a microwave to make.
50g caster sugar
2 tbsp unsweetened cocoa powder
½ tsp baking powder
A pinch of salt
3 tbsp melted butter
3 tbsp milk, at room temperature
½ tsp vanilla extract
28g semi-sweet or dark chocolate, broken into pieces
1 tbsp water
½ tsp icing sugar (optional)
1 In a mug, whisk together the flour, sugar, cocoa powder, baking powder and salt with a fork until well combined.
2 Add the melted butter, milk, egg and vanilla extract. Whisk well to combine, making sure to include the flour mixture at the bottom.
3 Place the chocolate pieces in the centre of the mug. Do not push them down as they will sink during baking.
4 Drizzle 1 tbsp water on the top of the batter.
5 Cook in a microwave oven on full power for 1min 20sec to 2min, or until the cake rises to the top. It should look set around the edges, with the centre looking and feeling slightly moist. Do not overbake as you want the centre to be soft.
6 Cool at room temperature for 5min before serving with a sprinkle of icing sugar.
