MAKE IT:

FRUIT AND CHEESE SKEWERS

Make 200g of cherry-size fresh mozzarella balls and halve each one. Peel and cube a mango into 1cm pieces, and wash and dry 150g of fresh rasp berries. On a 15cm skewer, thread a raspberry, followed by a basil leaf (folded in half), a piece of mozzarella, a basil leaf, a mango cube, a basil leaf, a piece of mozzarella, a basil leaf, and a raspberry. Repeat on additional skewers and arrange them on a platter. Drizzle with store-bought balsamic glaze. (Makes 16; 51 calories each)
