SUMIYA
This joint offers charcoal-grilled seafood and meats, and also specialises in fish prepared using the traditional Japanese grilling method genshiyaki. The fish is first dried in a machine set at a constant 30 deg C to replicate sun-drying in order to intensify its natural flavour. It is then slow grilled vertically over smouldering charcoal for 20 to 40 minutes to give its skin a smoky flavour.
KUISHIN BO
An institution at Suntec City, this Japanese restaurant is known for its buffet spread (from $36.90 per adult for lunch; from $54.90 per adult for dinner), which includes an awesome array of fresh seafood – scallops, clams, prawns and, of course, its signature snow crab legs (only during dinner). Our favourites: the meaty green mussels and the smaller blue ones with a robust sweetness.

TONY ROMA’S There’s no shortage of hearty options here, but we like The Roma Feast ($60.90): slow-cooked ribs slathered with the restaurant’s Carolina Honey BBQ Sauce, tender barbecued chicken, grilled sausages, corn on the cob and coleslaw. It’s meant to be a sharing platter for two, but we’re talking about American sizes here. We think it’s good for a family of four!
TURKISH KEBAB HOUSE Fans of Turkish cuisine will love the İskender Kebab ($14.50) served here. Expect delectably tender, thinly cut grilled lamb slices best eaten with generous dollops of homemade plain yogurt. Mop up the tomato-based sauce with the chunks of toasty ekmek (Turkish bread) served with the dish.
DISTRICT 10 BAR & GRILL The piece de resistance at this chic restaurant-bar, the Charcoal Grilled Traditional Fiorentina Steak ($19 for 100g; minimum order of 800g), is good for sharing with a fellow meat lover. It is lightly seasoned with sea salt, pepper and extra virgin olive oil, allowing the rich flavour and succulence of the beef to shine. We guarantee that it will be love at first bite.
THE MANHATTAN FISH MARKET Scared of fire? Don’t be. The Manhattan Flaming Seafood Platter (from $38.95) presents battered fish fillets, oysters and calamari, as well as prawns flambeed before your eyes by a server with a portable gas canister. It’s pretty dramatic and gives the crustaceans a lovely caramelised flavour.
