The right ramekin matters Use ramekins which have a straight, smooth and even interior as this helps give your soufflé a more stable rise.

Choose dark chocs To get the best taste and texture from the melted chocolate, choose dark chocolate with a cacoa content of 70 per cent at least.

Adjust your bake time Baking for about 15 mins will result in a soufflé with a more custardy texture and a molten centre. If you prefer your soufflé with a more springy and consistent texture, with less melted chocolate, increase the bake time to about 18 to 20 mins.
