House-marinated and smoked Atlantic salmon, horseradish cream and salmon roe

Serves one

Directions

Horseradish Cream
Whip the cream to a soft peak; add horseradish, season with salt and pepper and set aside.

Salmon
Cut the fish into long, thin slices, season with salt, lime juice, olive oil, lime zest and a dash of Ricard. Set in the fridge.

Plating
Dot toast or blinis with horseradish cream and plate it randomly with the marinated smoked salmon. Decorate with arugula leaves, lime wedges and dill. Served chilled.

Ingredients
100g raw salmon fillet 100g high-grade smoked salmon 30g horseradish 60g whipped cream 20g salmon roe 1 pinch of salt 3cl Ricard ½ tsp lime juice olive oil and lime zest, to taste toast or blinis
