Pork Burger with Apple Slaw

Prep 20 mins (plus cooling) • Cook 20 mins • Serves 6

• 1 tbsp olive oil • ½ onion, finely chopped • 50 g pancetta, finely chopped • ½ cup pecans, roughly chopped • 2 tbsps dried cranberries, finely chopped • 1 tbsp thyme, finely chopped • 400 g pork mince • ¾ cup dried breadcrumbs • 1 egg, beaten • 1 tbsp vegetable oil • ¼ cup mayonnaise • ¼ cup dill, finely chopped • 6 bread or brioche rolls, halved, toasted • Gherkins, to serve

APPLE & FENNEL SLAW

• 1 baby fennel, trimmed and sliced • 1 red apple, cored and julienned • 2 radishes, finely sliced • ¼ cup mayonnaise • 1 tbsp lemon juice

1 Preheat oven to moderate, 180 C. Line an oven tray with baking paper.

2 In a large frying pan, heat oil on medium. Saute onion and pancetta for 3 to 4 mins, until onion is tender. Transfer to a large bowl and stir in pecans, cranberries and thyme. Cool 5 mins. Add pork mince, breadcrumbs and egg and stir until combined. Season and shape mixture into six flattened patties.

3 In a large frying pan, heat oil on high. Cook patties for 3 to 4 mins each side until golden. Transfer to tray. Bake 5 to 10 mins until cooked through.

4 APPLE & FENNEL SLAW In a small bowl, combine all ingredients. Season to taste.

5 In a bowl, combine mayonnaise and dill. Season. 6 Top each roll base with dill mayo, patty and slaw. Cover with roll tops and serve with gherkins.
