Beef Burger with Fruit Chutney & Blue Cheese

Prep 15 mins (plus chilling) • Cook 10 mins • Serves 4

• 500 g minced beef • ¼ cup parsley, leaves picked and chopped • 2 tbsps whole egg mayonnaise, plus extra to serve • 2 tbsps cornichons, finely chopped (or use pickles) • 1 tbsp Dijon mustard, plus extra to serve • 1 tbsp capers, drained and finely chopped • 3 anchovies, drained and finely chopped • 1 eschalot, peeled and finely chopped • 2 tbsps olive oil • 4 toasted sesame seed buns • 2 cups watercress, washed and leaves picked • 160 g sliced blue cheese • Fruit chutney, to serve

1 In a medium bowl, combine beef, parsley, mayonnaise, cornichons or pickles, mustard, capers, anchovies and eschalot. Season. Divide and shape mixture into 4 flattened patties. Cover and chill until required.

2 Heat oil in a large non-stick frying pan on high. Cook patties 2 to 3 mins each side until cooked through. Drain on paper towel.

3 Spread toasted buns with extra mustard and mayonnaise. Place watercress and slice of blue cheese on base of each bun. Top with beef patties, chutney and remaining bun halves.

TIP: You can replace blue cheese in the recipe with cheddar or brie if preferred.
